A celebration of the most famous of Provençal sauces, Aïoli takes pride of place on the table, to be eaten with a huge spread of delicious things. In Provence in Summer there is always aïoli, and it’s the go-to celebratory dish for a little special occasion, a hungry family, or, indeed, an entire village of garlic lovers.
On the 2nd of July we’ll be throwing our own celebration of Southern French Summer, and putting together a no-holds-barred Grand Aïoli.
There’ll be 3 little toasts topped with delicious vegetables and some fresh cheese, then a delicious chilled almond soup with a whisper of garlic, some sweet, juicy melon, crispy ham and a drizzle of olive oil.
Then to the main event! The kitchen team will be making a huge vat of garlicky Aïoli, to be eaten with a vast array of accompaniments: Salt Cod always features, along with a wide variety of Summer vegetables: from Artichokes, Cauliflower, Bobby Beans and the finest Bull’s Heart Tomatoes from Sorrento, to the first of the nubbly Pink Fir Potatoes, and, in place of the more traditional snails, a nice little summery stew of Squid and Wild Fennel cooked in Rosé.
We’re hoping to get a few Scottish Langoustines down on the train and these will be boiled to order by the piece (at a supplement)
We’re talking to our friends at Mons Cheesemongers and they will be selecting whatever is tasting best for the dinner, and we're happy to announce the return of a classic Cherry Clafoutis to finish.
